What are your favorite types of foods?

This won’t count as part of my posting schedule.

Favorite meals

I love pizza, especially with sausage and mushroom.

I love pasta and meatballs. I like the meatballs flame-broiled.

As a side for either of the above entrees, I love garlic cheese bread with spinach and feta in addition to mozzarella and provolone cheese. I love focaccia cheese bread.

I also love pesto pasta with kale, pine nuts, and sun-dried tomatoes.

I like chicken, particularly the breast and wing. I love it crispy-fried, and I even more love chicken on a wood-fired on a rotisserie spit.

I like charbroiled steak.

I love fish. Specifically, I like wild-caught flounder, walleye, and cod fried and salmon either grilled or hot-smoked. I love fish lime-breaded, whether fried on a pan or baked in the oven.

I love lobster tail, and I also love calamari, scallops, and shrimp.

I also like mashed potatoes. I love real mashed potatoes with beef gravy. I love garlic mashed potatoes with garlic butter, asiago cheese, and olive oil. I might like coconut oil, palm oil, or palm kernel oil instead of butter.

Desserts

I only eat dark chocolate, not milk chocolate.

I love brownies.

I also love chocolate cakes.

I love Nutiva, which is like Nutella, but another brand that is darker and lower in sugar. I will put it in sandwiches and on donuts, cakes, cupcakes, and things like those. I even dip dates in Nutiva.

I love ice cream sandwiched between two chocolate chip cookies, like a big bopper.

Alternative food and beverage

Instead of wheat flour and peanut butter, have almond flour and cashew butter.

Instead of wheat flower and dairy milk, have almond flour and cashew milk.

Instead of chocolate, have coffee mixed with either palm oil, palm kernel oil, or coconut oil or a combination of them. Add carob to the blend too.

Instead of hot chocolate, have caroffee – a blend of carob and coffee.

Carob peanut butter cups – carob and peanuts belong together, since they are both legumes. One would not have carob almond butter cups, because that defeats the almond butter point of eating legume-free.

Instead of pork sausage, have sausage of mixed beef and turkey. That would make a halal and kosher substitute, as long as both the beef and turkey was slaughtered in a halal or kosher manner respectively. Doesn’t matter if the beef is finished on grain or grass, maybe do a grain-on-grass program. Another idea is to use venison, which may also be mixed with beef and/or turkey. The sausage should be either hot-smoked or flame-broiled – in the former case it doesn’t matter if you use a vertical smoker or a horizontal smoker. In the case of horizontal smoker, reverse flow would be good. For flame broiling, gas and lumpwood charcoal would both be great.

Make pasta with sorghum and millet instead of wheat. Use wheat ONLY for bread and other things that rising crust is applicable to, such as muffins, cakes, and pizza. Don’t use wheat or anything with gluten for the breading of poultry such as chicken or seafood such as fish. Use sorghum and millet for that.

Kosher and Halal feast idea

Jewish and Islamic dietary laws have many similarities but some differences, yet both have been found by nutritionists to be a guideline for a healthy diet.

Leviticus 11 – eating only even-toed ungulates that in chew the cud, eating only marine animals that have fins and scales, not eating any invertebrates except locusts, and not eating the birds listed as forbidden in Leviticus 11:13-19 – all of that constitutes a healthy diet, and so do the rest of the Laws of Kashrut: not combining meat and dairy in the same meal, not eating blood or animal fat, and not eating animals that die of themselves.

But what does a split hoof have anything to do with the animal being clean? I could see how chewing the cud would have a connection to cleanliness, but what connection does a split hoof have to the cleanliness? Are the laws of Kashrut even hygeinic? Or are recent claims of hygeinity related to clean and unclean food considered pseudoscience? Edit: “chew the cud” is probably not an accurate translation. The Hebrew phrase commonnly translated “chew the cud” is alah gerahh. Alah can also mean “regurgitate” or “restore”, while gerahh is used nowhere else in the Old Testament. The only foods forbidden in the Qur’an are animals that die of themselves, blood, the flesh of swine, and that which is slaughtered in any name other than Allah. At least the first three count as part of a healthy diet. Additional dietary restrictions can be found in the Hadiths, like not eating birds of prey, not eating carnivores, as well as not eating water creatures that are not fish. One Hadith permits the eating of horse meat but forbids the eating of donkey meat. Much of that constitutes a guideline for a healthy diet. But Muslims only regard the Qur’an as inerrant, not the Hadiths. Edit: I realized… Actually, I think it’s the Sunnah, not the Hadiths, that give additional dietary restrictions.

Grilled beef steak, ideally either medium-rare if from grass-finished cattle, or medium-well if from grain-finished cattle. Possible substitute: Hot-smoked brisket. Either steak or brisket ideally from pasture-raised cattle.

Wood-fired rotisserie chicken, free-range.

Lime-breaded fish, baked. Edit: Another idea is hot-smoked salmon or mackerel or pickled sardines or herring.

Locusts as well. Edit: Later I read that according to most Jews, the type of locust permitted in Leviticus cannot be identified today.

Dairy-free mashed potatoes with beef gravy.

Also rice and broccoli to go with chicken.

How food should be done, and then some

Sorry I’m a week late to post.

But anyway…

Pizza should be either hand tossed or better yet, cooked in wood/charcoal-fired or gas-fired masonry oven.

Cookies, especially peanut butter cookies, should be whole wheat. Grandma cookies on the other hand should be white bread.

Barbecuing, smoking, and grilling should mix wood and charcoal when possible. Grill preferably either charbroiler or Kamado grill or Big Steel Keg, although two-sided grilling may be better than charbroiling. Smoker either Weber smokey mountain, horizontal offset smoker with tuning baffle plates, reverse flow box smoker, or propane smoker. Kamado grill or Big Steel Keg should be made primarily of cermet of 80% ceramic and 20% metal. Add a mix of wood and charcoal to a gas grill or propane smoker where possible. Ideally a clean flame, maybe lean burn, would feed into a mix of charcoal and wood. Use water pan where possible.

Edit note: I made some edits to the above paragraph.

Edit: Cooking at high temperatures and cooking at low temperatures each have advantages and disadvantages. For roasting, use the combination method mentioned in https://infogalactic.com/info/Roasting#Methods to get the best of both worlds. Low-temperature for most of the cooking time, with high temperature at both just the beginning and the end.

Omelet could mix bacon and sausage, the latter of which would balance out the blandness and unpalatability of the bacon, and also mix cheddar with mozzarella. Diced tomatoes may do away with the blandness and unpalatability of the eggs. Also include spinach.

Again, meat be grilled or smoked, vegetables cooked other methods.

Extra virgin olive oil on fresh hot pizza.

Combine sausage and pepperoni on pizza. Sausage complements the taste of pepperoni. Also have spinach or kale. Red and yellow peppers could do as well.

Side for spaghetti with marinara and meatballs should be garlic multi-cheese bread which could additionally have feta and spinach.

Sausage and zucchini skillet could be served on spaghetti or pasta. The skillet should combine yellow summer squash with zucchini, and also sliced red and yellow peppers and diced tomatoes and minced onions and seasonings such as oregano and either garlic powder or garlic salt. Could also add spinach and/or kale. Don’t forget olive oil. Edit: zucchini and yellow summer squash should be cubed.

Garlic mashed potatoes should be skin-on and should be made with buttercream and asiago cheese rather than whole or skim milk. Don’t forget garlic salt, or alternatively garlic powder and sea salt. Also leavy green seasoning. Eat them as a side for steak either medium-rare grass-finished or medium-well grain-finished. Steak would preferably be grilled, barbecued, or hot-smoked. Alternatively to steak would be fried or baked chicken or lobster tail, maybe with a side of shrimp and/or crab legs. Breaded cod also works. Edit: Scallops anyone?

Tacos eaten alongside black beans and brown rice. Tacos with hard corn shells and soft flour tortillas.

Now for desserts

Chocolate shell of ice cream bar should be semi-sweet or bittersweet dark chocolate.

For any chocolate, should mix carob with chocolate.

Peanut butter cups should be just like Trader Joe’s, but with peanut butter component unsweetened. Cashew butter may be better.

Ideal ice cream would be dark chocolate fudge. Served in an oreo waffle dish or oreo waffle cone.

Food ideals

Burgers should be mixed beef and venison. Healthier than all-beef, doesn’t break up like all-venison.

Sausage should be either mixed pork, lamb or hogget, and turkey, or mixed beef and venison. Desire it be braised, hot-smoked, or grilled, probably best smoke-braised.

Steak be grilled or hot-smoked. Chicken be rotisserie, fried, or baked, or perhaps better smoke-roasted.

Only meat and poultry and maybe shellfish be grilled and smoked. Not vegetables.

Garlic mashed potatoes should have Asiago cheese and buttercream, rather than milk. Also desire leafy green on top as well as garlic.

Garlic bread for pasta should have cheese of mixed cheddar and mozzarella and maybe Parmesan.

Pizza be multi-cheese.

Bread, pizza, and cookies should be multi-grain. Grandma cookies should have white flour though, while chocolate cookies and chocolate chip cookies could be whole wheat.

No cheddar on pizza.

Ice cream should be mixed goat and cow’s milk with water ice crystals.

Chocolate treats and desserts, such as cake, brownies, hazelnut spread, and ice cream, should be mixed dark chocolate and carob and in some cases fudge.

Hot chocolate should have bittersweet cocoa powder mixed with either creamer, oat milk, cashew milk, or almond breeze.
