If Dr. Gundry founded a lectin-free restaurant, this is what it would be like

What should it be called? Gundry Buffet? Gundry diner?

Including leafy greens and cruciferous vegetables. Also offering mushrooms.

Bread, pizza crust, cakes, brownies, cookies, and pastries and such would be made from sorghum and millet rather than other grains like wheat and barley. Avoiding whole grains. Also include sourdough bread.

Generally avoid legumes and nightshades. Whenever lectin-dense foods are used, they are cooked moist on high heat. Beans are soaked for minutes, and then drained before being cooked. Tomatoes would have their seeds and skin removed, because that’s where the lectins are mostly found. Pressure cookers would be preferred. Edit: I forgot to mention that soy would generally be avoided, if any soy is used it would be fermented.

Also fermented foods such as pickles, miso, and kombucha.

Avoiding peanuts and cashews, and using walnuts, macademia, brazil nuts, and pistachios instead. Also avoiding sunflower seeds. Blanched almond butter may also be used.

Also meats from pasture-raised, grass-finished livestock.

Milk without casein A1, such as buffalo milk, goat or sheep milk, or A2 milk may be included. If just one of them is included, just have buffalo milk, but if two of them are included, include both buffalo and either sheep or goat milk. Coconut milk would also be offered. Edit: I forgot to mention that fermented dairy products would be included.

Don’t forget yams and sweet potatoes, preferably purple sweet potatoes.

And featuring polyphenol-rich fruits such as raspberries. Avoiding goji berries. Sweet fruits would only be available from the middle of summer to the beginning of winter. Also only offering green and maybe yellow bananas, not ones that have browned.

Also avocado.

Olive oil, not seed oils like canola or sunflower.

Dark chocolate may also be featured, including semi-sweet and/or bittersweet chocolate chips.

Herbal tea might also be featured, because that’s polyphenol-rich.

No artificial sweeteners like saccharin. Stevia, monk fruit, and allulose would be used instead. May have packets of each of the three sugar substitutes.
